3 c. flour (Can use up to 1 cup of red wheat, or 1 1/2 cups white wheat)
1 T. baking powder
1/3 c. sugar
1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. butter
1 c. buttermilk (I use 1 T. lemon juice and then add regular milk up to one cup.)
Mix together all dry ingredients in large bowl. “Cut in” butter until mixture is crumbly. (I use an electric hand mixer for this part.) Add the buttermilk and mix until dough forms. Turn out onto a lightly floured surface and knead center of dough three times. If the dough is sticky, add more flour. Roll out or press out the dough with your hands until it is about 1/2″ thick. Using a biscuit cutter or the top of a juice glass, press down into the dough without twisting the cutters. (This seems to help puff up the biscuit dough better.) Place in a 400° oven for 12-15 minutes. Yum!
